  • 3 yellow onions
  • 1 head garlic, top sliced off
  • 0.5 cup sun dried tomatoes
  • 3 tbsp tomato paste
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp chili pepper
  • 1 tsp dried oregano
  • 0.5 cup coconut milk
  • 4 cup pasta
  • fresh basil
  • spinach
  • lemon juice

Instructions

  1. Preheat oven to 400.
  2. In a casserole dish, add onions, tomatoes, tomato paste, salt, black pepper, chili pepper and dried oregano. Add oil and mix.
  3. Add whole garlic head in the middle.
  4. COVER the dish and place in over for 30 minutes. Take it out and stir.
  5. After another 20 minutes, take it out, stir and and spinach. Put back in oven for another 10 min.
  6. Once done, add cooked pasta to dish along with fresh basil, lemon and coconut milk.

  • pasta gets even better the next day, the first day it is a tad sweet
