  • 240g masa
  • 1.5 cup warm water
  • 0.75 tsp sea salt

Instructions

  1. In a large mixing bowl, briefly whisk together masa harina and salt. Gradually add warm water, and stir.
  2. Use your hands to knead the dough for 2-3 minutes in the mixing bowl until it is smooth and forms a cohesive ball. The texture should similar to Play-Doh. If you roll it up into a ball and flatten it, it should NOT have lots of creases in it. You can always add either more masa or water.
  3. Cover the bowl with a damp towel and let rest for 30-60 min.
  4. Form little balls and press them in tortilla press.
  5. Cook tortilla in HOT skillet. A little oil goes a long way.
  6. Transfer tortilla to tortilla warmer with cloth to let them steam a bit more. The tortillas on the bottom will be the most ready.

Variations:

  • Dried herbs & spices - use 1-2 tsp for every 2 cups of masa:
    • Chili powder for heat
    • Cumin for earthiness
    • Garlic/onion powder
    • Dried oregano or cilantro
  • Fresh additions - many of these have some water so you may need to add less
    • Finely minced fresh cilantro
    • Minced chiles
    • Roasted garlic (mashed)
    • Lime or orange zest
