corn tortillas
Servings: 5
- 240g masa
- 1.5 cup warm water
- 0.75 tsp sea salt
Instructions
- In a large mixing bowl, briefly whisk together masa harina and salt. Gradually add warm water, and stir.
- Use your hands to knead the dough for 2-3 minutes in the mixing bowl until it is smooth and forms a cohesive ball. The texture should similar to Play-Doh. If you roll it up into a ball and flatten it, it should NOT have lots of creases in it. You can always add either more masa or water.
- Cover the bowl with a damp towel and let rest for 30-60 min.
- Form little balls and press them in tortilla press.
- Cook tortilla in HOT skillet. A little oil goes a long way.
- Transfer tortilla to tortilla warmer with cloth to let them steam a bit more. The tortillas on the bottom will be the most ready.
Notes
Variations:
- Dried herbs & spices - use 1-2 tsp for every 2 cups of masa:
- Chili powder for heat
- Cumin for earthiness
- Garlic/onion powder
- Dried oregano or cilantro
- Fresh additions - many of these have some water so you may need to add less
- Finely minced fresh cilantro
- Minced chiles
- Roasted garlic (mashed)
- Lime or orange zest
