  • 1 can chickpeas
  • 0.67 cup lemon juice
  • 0.25 cup tahini
  • 8 garlic cloves
  • 2 tbsp olive oil
  • 0.5 tsp ground cumin

  1. Combine the tahini and lemon juice and process for 1 minute.

  2. Scrape the sides and bottom of the bowl, then process for 30 seconds more. This extra time helps whip the tahini to make it smooth.

  3. Add the olive oil, minced garlic, cumin, and a 1/2 teaspoon of salt. Process for 30 seconds.

  4. Scrape the sides and bottom of the bowl, and then process for another 30 seconds.
  5. Add half of the chickpeas to the food processor and process for 1 minute.

  6. Scrape the sides and bottom of the bowl, then add the remaining chickpeas and process them until thick and relatively smooth, 1 to 2 minutes.

  • Feel free to add additional spices when you add the cumin.
  • Garlic powder works great as a substitute.
  • Keep the speed on low so the hummus doesn't get too smooth.
