Core Ingredients
- 1 cup basmati rice
- 2 tbsp oil
- 1 tsp cumin seeds
- 3 green cardamom pods
- 1 bay leaf
- Salt to taste
- 5 peppercorns
Extra Ingredients
- 3 whole cloves
Instructions
- Rinse rice in cold water 2-3 times until water runs clear, then soak the rice.
- Heat oil in a pot over medium heat.
- Add cumin seeds, cardamom pods, bay leaf and peppercorns. Sizzle for 30 seconds until fragrant and cumin darkens slightly.
- Drain rice and add to pot. Stir gently for 1-2 minutes to coat grains with spiced oil.
- Add water and salt. Stir well and bring to a full boil.
- Immediately reduce heat to lowest setting and cover tightly with lid.
- Cook without lifting lid for the time specified for rice type.
- Turn off heat and let rest covered for 5 minutes.
