Core Ingredients

  • 1 cup basmati rice
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 3 green cardamom pods
  • 1 bay leaf
  • Salt to taste
  • 5 peppercorns

Extra Ingredients

  • 3 whole cloves

Instructions

  1. Rinse rice in cold water 2-3 times until water runs clear, then soak the rice.
  2. Heat oil in a pot over medium heat.
  3. Add cumin seeds, cardamom pods, bay leaf and peppercorns. Sizzle for 30 seconds until fragrant and cumin darkens slightly.
  4. Drain rice and add to pot. Stir gently for 1-2 minutes to coat grains with spiced oil.
  5. Add water and salt. Stir well and bring to a full boil.
  6. Immediately reduce heat to lowest setting and cover tightly with lid.
  7. Cook without lifting lid for the time specified for rice type.
  8. Turn off heat and let rest covered for 5 minutes.
