Core Ingredients

  • 2 potatoes
  • 1 tbsp unsalted butter
  • 1 cup packed kimchi
  • 2 tsp toasted sesame oil
  • Pinch of sugar

Extra Ingredients

  • Mozzarella
  • Yogurt
  • Scallions

Instructions

  1. Heat oven to 425 degrees. Pierce potatoes all over. Bake until tender, about 1 hour. A fork should pierce through center easily.
  2. Remove from oven and leave on counter to finish steaming, about 15 minutes.
  3. Heat pan, add butter, kimchi, sesame oil and sugar, and cook without stirring for 1 minute.
  4. Continue cooking, stirring occasionally, until the kimchi juices start sticking to the pan and the kimchi wilts down and its edges brown, 5 to 7 min.
  5. When potatoes have cooled slightly, slice each in half lengthwise and crosswise without cutting through the bottom and open up.
  6. Load up their shit and serve.
