noodle dumpling soup
servings 2
core ingredients
- 2 tbsp red curry paste
- 2 tbsp peanut butter
- 2 garlic cloves
- ginger, 1 inch grated
- 14 oz coconut milk
- 3.5 cup veggie broth
- 1 lemongrass stalk
- 2 tbsp fish sauce
- lime juice
- 6 frozen dumplings
- 200g cooked udon noodles
- bok choy
- thai basil

instructions
- Add red curry paste, peanut butter, garlic, ginger, coconut milk, veggie broth, lemongrass, fish sauce, lime into a pan. Bring to a boil over a medium heat and whisk together to there are no lumps of curry paste or peanut butter.
- 2 tbsp red curry paste
- 2 tbsp peanut butter

- Cover, reduce the heat to low and cook for 10 minutes.
- Increase heat to a gentle bubble and add dumplings. Cover and cook for 5-6 minutes or until they are floating.
- 6 frozen dumplings
- Add the noodles, bok choy and thai basil. Cover and cook for 2-3 minutes.
- 200g cooked udon noodles

- Serve with chilli oil.

- This turned out just okay when you made it. To be fair you made quite a few substitutions. It's a good dish so iterate on this a bit
- Potentially add some miso paste next time
