Core Ingredients

  • 15 cashews
  • 0.25 cup milk
  • 2 tbsp ghee
  • 1 tsp cumin seeds
  • 1 tsp ginger
  • 1 tsp garlic minced

  • 1 yellow onion chopped
  • 1 lb spinach
  • 1 tsp salt
  • 1 cup water
  • 2 cup paneer
  • 1 tsp garam masala

Instructions

  1. Blend cashews with milk or water into a smooth puree and set aside.
  2. In the Instant Pot, heat ghee and sauté cumin seeds, ginger, garlic, and serranos for a minute.
  3. Add onions and cook until translucent, then stir in spinach, water, and salt.
  4. Pressure cook for 0 minutes (fresh spinach) or 1 minute (frozen spinach).
  5. Add ½ cup of cold water & carefully blend the spinach.
  6. Add cashew cream, garam masala, and paneer.
  7. Mix and cook for 1 to 2 minutes on saute mode. Take out the inner pot on a hot plate to avoid overcooking.
