  • 0.25 cup olive oil
  • 4 garlic cloves minced
  • 2 lb cherry tomatoes
  • 2 tbsp tomato paste
  • 1 tsp kosher salt
  • 0.5 tsp fresh ground black pepper
  • 0.25 tsp sugar
  • 0.25 cup basil leaves
  • 1 eggplant
  • 8 oz mozzarella
  • 2 shallots
  • 0.5 lemon

Instructions

  1. Cut up eggplant into small squares and bake at 425 until crispy.
  2. Heat olive oil over medium heat. Add shallots and cook until translucent.
  3. Add garlic and sauté 1 minute or until fragrant but not turning brown.
  4. Add tomato paste and let cook for 1-2 min.
  5. Add the tomatoes, salt, pepper, and sugar.
  6. As the tomatoes cook and soften, mash them with a fork. Cook 5-6 min.
  7. Add eggplant and lemon juice in and combine.
  8. Sprinkle with torn basil and mozzarella.
  9. If serving with pasta, transfer the tomato sauce to a bowl with the pasta, and toss to combine.
