Core Ingredients

  • 2 avocados
  • 1 cup artichokes, chopped
  • 1.5 cup spinach
  • 1 lemon, juice and zest
  • 4 garlic cloves, minced
  • 1 tbsp olive oil
  • salt to taste
  • black pepper to taste
  • chili flakes

Extra Ingredients

  • cilantro, chopped
  • serranos for topping, sliced
  • 0.25 cup crumbly cheese (cotija or feta)

Instructions

  1. Roughly chop artichokes and spinach.
  2. Heat olive oil in a pan over medium heat.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Add spinach and cook until wilted, about 2 minutes.
  5. Add artichokes and warm through.
  6. Halve avocados and scoop into a bowl.
  7. Mash avocados to desired consistency.
  8. Add the spinach-artichoke mixture and combine.
  9. Add lemon juice, zest, salt, pepper, and chili flakes.
  10. Mix well and taste for seasoning.
  11. Top with cilantro, serranos, and crumbly cheese if desired.
